Gazpacho is a traditional south Spain preparation, which is a kind of fresh soup made of raw blended vegetables. You will find many complex recipes in the traditional literature. I make a simple mixture of cucumber and tomatoes, out of the fridge. I add a bit of Tabasco (or hot pepper purée), some Celeri Salt, and olive oil. I also add some fresh basil.

Note. Fresh basil can be difficult to grow in many parts of the world and may be unaffordable and not environmentally friendly when imported and wrapped in plastic. There is an alternative which is Pesto, which I use in the example on the picture, and can be found in glass container. I use some organic pesto, which is low salt, and made only of salt olive oil and basil.
